Ingredients:
- 1 pound of chicken, beef, or tofu, cut into bite-sized pieces
- 2 tablespoons of vegetable oil
- 1 can of coconut milk (14 ounces)
- 2 tablespoons of green curry paste
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 eggplant, sliced
- 1 cup of sliced bamboo shoots
- 1/2 cup of fresh basil leaves
- Salt and sugar to taste
- Steamed rice, for serving
Instructions:
- Heat the vegetable oil in a large saucepan over medium heat.
- Add the green curry paste to the saucepan and cook for 1 minute.
- Stir in the sliced red bell pepper, zucchini, eggplant, bamboo shoots, and salt to taste.
- Pour in the coconut milk and bring the mixture to a boil.
- Reduce the heat to low and let the mixture simmer for 10 minutes.
