How to cook Thai Green Curry

 

Thai Green Curry is a classic Thai dish that is both flavorful and spicy. Here is a simple recipe to get you started:

Ingredients:

  • 1 pound of chicken, beef, or tofu, cut into bite-sized pieces
  • 2 tablespoons of vegetable oil
  • 1 can of coconut milk (14 ounces)
  • 2 tablespoons of green curry paste
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 eggplant, sliced
  • 1 cup of sliced bamboo shoots
  • 1/2 cup of fresh basil leaves
  • Salt and sugar to taste
  • Steamed rice, for serving

Instructions:

  1. Heat the vegetable oil in a large saucepan over medium heat.
  2. Add the green curry paste to the saucepan and cook for 1 minute.
  3. Stir in the sliced red bell pepper, zucchini, eggplant, bamboo shoots, and salt to taste.
  4. Pour in the coconut milk and bring the mixture to a boil.
  5. Reduce the heat to low and let the mixture simmer for 10 minutes.
  6. Add the chicken, beef, or tofu and let the mixture simmer for another 10 minutes or until the meat is cooked through.
  7. Stir in the fresh basil leaves and sugar to taste.
  8. Serve the Thai Green Curry over steamed rice.

This recipe makes 4 servings. You can also adjust the level of spiciness to your taste by using more or less green curry paste. Enjoy your homemade Thai Green Curry!
