How to make indian mutton briyani

Mutton biryani is a delicious and flavorful dish that combines tender mutton with fragrant rice and a variety of spices. Here is a recipe for cooking mutton biryani:

Ingredients:

  • 1 lb boneless mutton, cut into small pieces
  • 2 cups basmati rice, washed and drained
  • 3 cups mutton broth or water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • 1/4 cup yogurt
  • 1/4 cup ghee or oil
  • 1/4 cup chopped cilantro
  • Salt to taste

Instructions:

  1. In a large pot or Dutch oven, heat ghee or oil over medium heat. Add the chopped onions and cook until they are golden brown.
  2. Add the garlic and ginger, and cook for another minute.
  3. Add the mutton and cook until it is browned and cooked through.
  4. Add the cumin, coriander, turmeric, red chili powder, and garam masala powder, and stir to combine.
  5. Add the rice, mutton broth or water, and salt to taste. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.
  6. Cook the biryani for 18-20 minutes, or until the rice is fully cooked and the liquid has been absorbed.
  7. Stir in the yogurt and cilantro, and cook for an additional 2-3 minutes.
  8. Serve the biryani hot, garnished with additional cilantro if desired.

Note: The above recipe is a basic recipe, you can add vegetables of your choice and also add saffron for more aroma and color. It is also traditional to layer the mutton and rice, then seal the pot with dough before cooking to trap the steam and enhance the flavors.
